Mindy's Paleo Chicken Soup

My friend Mindy found this delicious Paleo option for chicken soup. Actually, it turns out as more of a chili. In fact, this is as good, if not better than the original, and no soggy wheat noodles which are a Paleo no-no!


2.5-3 pounds chicken breast, sliced into strips

4 garlic cloves, minced

2 onions, chopped

1 (14 oz) jar of roasted red peppers

2 (14 oz) cans diced tomatoes, undrained

3 cups chicken broth

1.5 tbls chili powder

2 teaspoons garlic powder

2 tsp dried oregano

4 tsp cumin powder

2 tsp sea salt

2 tsp coarse black pepper

lrg head cauliflower

1 bunch fresh cilantro (enough for 4 tablespoons)


- Turn on slow cooker on HIGH while you get your ingredients ready

- Rub on some coconut oil to your slow cooker insert

- Place the chicken slices, garlic, onions and peppers on the bottom of the slow cooker

- Gently pour in the diced tomatoes and chicken broth

- Add the chili powder, garlic powder, oregano, cumin, salt and pepper

- Cover and turn slow cooker to LOW

- Cook for 2-4 hours

- 30m before you want to serve, pulse the cauliflower and cilantro in a food
processor until you have the consistency of rice
- Stir the cauliflower-cilantro mixture into the soup
