Sunday Seafood Roast

This is an easy and spicy dish which combines a few different seafoods, some crispy vegetables, and takes 10m to chop, and the oven does the work.


½ # wild salmon (I prefer sockeye from here:

1  # jumbo shrimp

6 large scallops

3 large carrots

½ head cauliflower

4 leaves kale

4 cloves garlic

4 tspn olive oil

½ stick butter

Salt, Pepper, Red Pepper flakes, Basil



- Preheat oven to 375

- Remove skin from salmon, cut up

- Quarter scallops

- Remove tails on shrimp

- Put all in glass lasagna pan

- Add sliced up butter, other 2 tspn garlic, sprinkle with salt, pepper, red pepper flakes

- Put in oven after vegetables and bake for 5m, broil for 2m stirring once

- Slice the vegetables, tear the kale up, out into glass lasagna pan

- Chop garlic, add 2 tspn

- Drizzle with olive oil, sprinkle with salt, pepper, and basil

- Bake at 375 for 15m
