These patties are loaded with lean protein and healthy omega 3 oils. The fresh herbs make them taste great and the almond meal is far better than bread crumbs. Make enough to last a few days.
What you need
1# large scallops ( or 1/2# and a 1/2# white fish such as cod or sole)
3-4 scallions, chopped
1 tspn fresh thyme
1 tspn fresh rosemary
1 tspn sesame seeds
Salt & pepper to taste
1/4 cup almond meal
1 tspn Worcestershire
What you do:
- Add all ingredients to a food processor and blend for 1 min
- Form patties
- Sauté in coconut oil at medium heat. Do not overcook.
